Oat and Walnut Crackers

Ingredients

  • 120 g Rolled Oats
  • 80 g Shelled Walnuts
  • 40 g Unsalted Butter
  • 100 mls boiling water
  • 30 g Plain white Flour
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Baking Powder

Instructions

  1. line oven tray(s) with baking paper.
  2. Process the rolled oats to a fine floury meal then transfer to a mixing bowl.
  3. Process the walnuts until very finely chopped, but stop before the oil runs from them. Add to the oatmeal.
  4. Add the flour, salt, pepper, sugar and baking powder and mix thoroughly. Put all in food processor.
  5. Chop the butter into small pieces add to food processor and blitz.
  6. Pour the boiling water into the dry ingredients. blitz
  7. Mix until thoroughly combined and the mixture forms a ball. Use a pastry scraper to draw all the dough into a ball. The dough will be quite sticky.
  8. Cover the dough and set aside to rest for at least 30 minutes.
  9. The oats will absorb the moisture.
  10. Cut the dough in half, then roll one piece between a piece of clingfilm out until it is 3-4mm thick.
  11. Use a fluted cookie cutter to cut the dough into circles.
  12. Lift the cut pieces onto the paper lined tray with a spatula. The crackers can be placed quite close together on the tray, they will not spread.
  13. Repeat with the second half of the dough, then repeat these steps with the rerolled trimmings.
  14. Bake for approx 20 minutes or until golden brown.
  15. Makes approx 40 yummy walnut oat crackers.
