Orange Ginger Plum Cobbler
Delicious and warming on a cold autumn night. Ginger and orange highlight the taste of the plums. Free of gluten, dairy, soy and nuts for the allergen sensitive.
Ingredients
- 8 plums
- * 1/2 cup rice flour
- * 1/8 cup tapioca starch
- * 1/8 cup potato starch
- * 1/2 cup agave syrup
- * 1/2 cup orange juice
- * 1/4 cup canola oil
- * 1 egg
- * 2 teaspoons baking powder
- * 1/4 teaspoon baking soda
- * 1 teaspoon xanthan gum
- * zest from 1 orange
- * 1 teaspoon ginger
Instructions

Slice plums.

Mix plums, orange juice, agave and ginger in a baking dish.

In a separate bowl, mix dry ingredients with egg, oil and zest.

Pour mixed batter over the plums.

Cook at 350 degrees for 30 minutes.
