Orange Ginger Plum Cobbler

Delicious and warming on a cold autumn night. Ginger and orange highlight the taste of the plums. Free of gluten, dairy, soy and nuts for the allergen sensitive.

Ingredients

  • 8 plums
  • * 1/2 cup rice flour
  • * 1/8 cup tapioca starch
  • * 1/8 cup potato starch
  • * 1/2 cup agave syrup
  • * 1/2 cup orange juice
  • * 1/4 cup canola oil
  • * 1 egg
  • * 2 teaspoons baking powder
  • * 1/4 teaspoon baking soda
  • * 1 teaspoon xanthan gum
  • * zest from 1 orange
  • * 1 teaspoon ginger

Instructions

  1. Slice plums.
  2. Mix plums, orange juice, agave and ginger in a baking dish.
  3. In a separate bowl, mix dry ingredients with egg, oil and zest.
  4. Pour mixed batter over the plums.
  5. Cook at 350 degrees for 30 minutes.
