* 1/2 cup rice flour
* 1/8 cup tapioca starch
* 1/8 cup potato starch
* 1/2 cup agave syrup
* 1/2 cup orange juice
* 1/4 cup canola oil
* 1 egg
* 2 teaspoons baking powder
* 1/4 teaspoon baking soda
* 1 teaspoon xanthan gum
* zest from 1 orange
* 1 teaspoon ginger
Instructions
Slice plums.
Mix plums, orange juice, agave and ginger in a baking dish.
In a separate bowl, mix dry ingredients with egg, oil and zest.
