Apple sauce cake
An easy apple cake, that requires very little prep time. The cake is moist, lightly spiced and dotted with raisins and walnuts. Serve for afternoon tea, elevenses or pop into packed lunches.
- 100 g butter
- 150 g caster sugar
- 250 g chilled apple sauce
- 250 g plain flour
- 1 teaspoon bicarbonate of soda
- 1 teaspoon ground cinnamo
- 75 g raisins
- 60 g chopped walnuts
Cream butter with sugar. Add apple sauce; beat well. Stir in flour, bicarbonate of soda and spices. Add nuts and raisins.
Pour batter into a greased and floured 20cm square tin. Bake at 180 C / Gas 4 for 40 minutes or until a skewer comes out clean when inserted into the centre of the cake. Serve warm.
