Leberknoedel
Ingredients
- 8 chopped stale, hard (eg kaiser-type) rolls or 250g of fresh breadcrumbs
- 100 ml warm milk
- 2 onions finely chopped
- 500 g liver minced
- Mixed garden herbs rosemary sage, thyme, chives
- freshly ground pepper to taste
- a teaspoon of salt
- 2 large eggs
- 600 ml clear vegetable stock
Instructions

Grind the bread to make breadcrumbs. If stale soak in a little extra milk.

Fry the onions until soft.

Add the chopped herbs and other ingredients. Mix until combined.

Shape into balls. Aim for 30.
