Leberknoedel

Ingredients

  • 8 chopped stale, hard (eg kaiser-type) rolls or 250g of fresh breadcrumbs
  • 100 ml warm milk
  • 2 onions finely chopped
  • 500 g liver minced
  • Mixed garden herbs rosemary sage, thyme, chives
  • freshly ground pepper to taste
  • a teaspoon of salt
  • 2 large eggs
  • 600 ml clear vegetable stock

Instructions

  1. Grind the bread to make breadcrumbs. If stale soak in a little extra milk.
  2. Fry the onions until soft.
  3. Add the chopped herbs and other ingredients. Mix until combined.
  4. Shape into balls. Aim for 30.
